Instructions how to bake bread

Part baked and deep frozen bread is a new type of bread on the Polish market. Most important advantages of this type of bread are:

  • Short time in which you get a ready product
  • Permanent possibility to sell hot bread
  • Possibility to prepare simultaneously several  types of bread
  • Possibility to react quickly to increased demand
  • Minimal losses by the elimination of returns (bread is baked based upon the number of customers)
  • Rich assortment
  • Saving of energy (even up to 40%)

 

I. Parameters of baking wheat and multi-grain bread (          ) including natural ciabatta and graham bread.

  1. Put bread evenly on baker's plates, unfreeze in the temperature of environment (ca. 22 grades Celsius) before baking for 20-30 minutes.

  2. Bake rolls immediately after unfreezing.

  3. Warm up the oven to the temperature of 220 grades Celsius.

  4. Insert plates with bread to the heated oven, start steaming in the oven (once at the beginning of baking, amount of water depends upon the weight)

  5. Bake 8-9 minutes up to the weight and amount of bread in the oven.

  6. Put bread from the oven after it has got the quality you wish

 

II. Parameters  of bread baking (chleb wiejski, chleb polski z m±k±)

  1. Unfreeze bread before baking in the temperature of environment (ca. 22 grades Celsius)  for 2-2,5 hours (bread can be unfrozen at night, it means you shall take it in the evening from a fridge to have bread unfrozen for morning baking, you shall only avoid bread to get dried or wet).
  2. Place pieces of bread evenly in small distance - ca. 0,5 cm from each other on the plates.
  3. Warm up the oven to the temperature of 180 grades Celsius.
  4. Put plates with bread to the heated oven, start steaming in the oven (once at the beginning of baking, amount of water depends upon weight)
  5. Bake in the temperature of 180 grades Celsius for 12-14 minutes up to the amount of pieces in the oven.

 

III. Parameters of baking form and whole-meal breads

  1. Unfreeze bread in the temperature of environment (ca. 22 grades Celsius) for 2-2,5 hours before baking ( bread can be unfrozen at night, you shall take it from the fridge at night to have it unfrozen for morning baking, you shall only avoid bread to get dried or wet).
  2. Put pieces of bread evenly, in small distance - ca. 0,5 cm from each other on the plates.
  3. Warm up the oven to the temperature of 180 grades Celsius.
  4. Put plates with bread to the heated oven, start steaming in the oven (once at the beginning of baking, the amount of water depends upon the weight).
  5. Bake in the temperature of 180 grades Celsius for 5 minutes.
